Question 1

What temperature should we smoke chicken thighs on a Traeger?

Accepted Answer

We start this recipe at 225°F for the smoking stage and then increase the grill to 375°F to finish the chicken and improve the skin.

Question 2

How long do chicken thighs take on a Traeger at 225°F?

Accepted Answer

Depending on their size and the grill, chicken thighs commonly need around 1 to 1½ hours during the initial smoking stage, followed by additional cooking at a higher temperature.

Use the thermometer to tell when they’re finished.

Question 3

Are smoked chicken thighs better bone-in or boneless?

Accepted Answer

Bone-in, skin-on thighs are particularly well suited to smoking because they are flavorful and forgiving. Boneless thighs are also excellent when convenience and faster cooking are the priority.

Question 4

Can we smoke chicken thighs at 250°F?

Accepted Answer

Yes. You can cook chicken thighs at different smoker temperatures. At 250°F, cooking time depends on the size of the thighs and your grill, so temperature should remain the main indicator of doneness.

Question 5

How do we make smoked chicken thighs crispy?

Accepted Answer

Start with dry chicken skin, avoid excessive oil, smoke the thighs first, and finish at a higher temperature. A hot finishing stage is particularly useful for rendering and browning the skin.

Question 6

Can we use BBQ sauce?

Accepted Answer

Yes. Brush BBQ sauce onto the chicken during the final 10 to 15 minutes so it caramelises.
